Honey-Baked Pumpkin with Vanilla & Sea Salt
Ingredients (6 total):
- 2 cups peeled and cubed pumpkin
- 1 Tbsp melted butter or coconut oil
- 2 Tbsp honey (or maple syrup if preferred)
- ½ tsp vanilla extract
- Pinch of sea salt
- Optional: chopped pecans or a dollop of Greek yogurt for serving
Instructions:
- Preheat oven to 400°F (200°C).
- Toss pumpkin cubes with melted butter, honey, vanilla, and sea salt.
- Spread on a baking sheet and roast for 20–25 minutes, flipping halfway, until golden and tender.
