This recipe for honey-baked pumpkin with vanilla and sea salt is a wonderful side dish, or even a vegetarian main with a finish of a dollop of Greek yogurt.

Honey-Baked Pumpkin with Vanilla & Sea Salt

Ingredients (6 total):

  • 2 cups peeled and cubed pumpkin
  • 1 Tbsp melted butter or coconut oil
  • 2 Tbsp honey (or maple syrup if preferred)
  • ½ tsp vanilla extract
  • Pinch of sea salt
  • Optional: chopped pecans or a dollop of Greek yogurt for serving

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Toss pumpkin cubes with melted butter, honey, vanilla, and sea salt.
  3. Spread on a baking sheet and roast for 20–25 minutes, flipping halfway, until golden and tender.
  4. Optional: Top with pecans or serve with yogurt for a creamy contrast.
